  • Instructions

    1. Combine flour and water and autolyse for 45–60 minutes

    2. Add starter and salt and mix until fully incorporated

    3. Perform three to four sets of stretch-and-folds over 2½ to 3 hours

    4. Allow bulk fermentation at room temperature until doubled in size

    5. Shape dough into a tight round and place seam-side up in a banneton

    6. Refrigerate shaped dough overnight for 10–12 hours

    7. Preheat oven to 475°F (245°C) with a Dutch oven or baking steel inside

    8. Dust chilled dough with flour and score a snowflake pattern

    9. Bake covered for 20 minutes then uncover and bake 20–25 minutes until golden

    10. Cool loaf completely on a rack before slicing
