These sourdough strawberry breakfast bars combine tangy sourdough with sweet strawberries and hearty oats for a healthy grab-and-go breakfast.

Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment.
2. Combine oats, flour, salt, and cinnamon in a large bowl.
3. Whisk sourdough starter, melted butter or oil, honey or syrup, and vanilla in another bowl.
4. Mix wet ingredients into dry until sticky, reserving 3/4 cup for topping.
5. Cook strawberries, lemon juice, and coconut sugar over medium heat 5-7 minutes, stir in cornstarch and cook 1-2 more minutes, then cool.
6. Press main oat mixture into pan, spread filling, and sprinkle reserved topping.
7. Bake 28-32 minutes until golden and bubbly.
8. Cool bars in pan for at least 1 hour on a rack before slicing.
9. Lift bars using parchment and cut into 9-12 pieces.
