  • 1 pound pork sausage, casings removed

  • 3 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cups warm chicken broth
  • 2 large eggs, beaten
  • Salt and pepper to taste

  • Instructions

    1. Preheat oven to 350°F (175°C) and spread sourdough cubes on a baking sheet. Toast for 10-15 minutes until slightly crisp, then cool.

    2. In a large skillet over medium heat, melt 1 tablespoon butter and cook sausage, breaking it into pieces, until browned. Remove and set aside, leaving drippings.

    3. Add 1 tablespoon butter to the skillet, then sauté onion and celery until softened, about 5 minutes. Stir in garlic, sage, and thyme for 1 minute.

    4. In a large bowl, combine toasted bread cubes, cooked sausage, and sautéed vegetables. Toss gently.

    5. Pour warm broth over the mixture in increments, tossing until cubes are moistened but not soggy. Stir in beaten eggs and season with salt and pepper.

    6. Grease a 9×13-inch baking dish with remaining butter. Transfer stuffing mixture, pressing lightly to compact.
