Instructions
1. In a mixing bowl combine sourdough discard, flour, and salt.
2. Add olive oil and water gradually, stirring until a shaggy dough forms.
3. Knead dough lightly for 2 minutes until smooth and elastic.
4. Cover dough with a towel and rest for 15–20 minutes.
5. Divide dough into four portions and roll each into an 1/8-inch thick round.
6. Preheat a cast-iron skillet over medium-high heat.
7. Cook each flatbread 30–60 seconds per side until golden and bubbly.
8. Stack cooked flatbreads under a towel to keep warm.
9. Top with roasted vegetables, cheeses, herbs, or spreads as desired.
