Creepy-delicious bite-size eyeballs made with mozzarella, salami, and olives—perfect make-ahead Halloween party appetizers.
Ingredients
20 small fresh mozzarella balls (ciliegine or bocconcini), drained
20 thin salami slices
10 olives (black or pimiento-stuffed green), sliced into rings
20 toothpicks or small cocktail skewers
Optional: a few strips roasted red pepper or red food coloring for veins
Optional garnish: parsley, lettuce, or herb leaves for the platter
Instructions
1. Drain mozzarella and pat dry well with paper towels.
2. Wrap each mozzarella ball with a thin slice of salami; fold to fit neatly.
3. Slice olives into rings and place one ring on the flattest side of each ball as the pupil.
4. Skewer through olive, mozzarella, and salami to secure each eyeball.
5. Optional: add thin red pepper strips or lightly brush red food color for vein details.
6. Arrange eyeballs on a platter; add herbs or greens for eerie contrast.
7. Chill until serving; keep covered in the fridge up to 2–3 hours.
8. Serve cold; refresh platter with extra olives or herbs as needed.
