Description
These crispy starburst squash tots are a fun, family-friendly appetizer or snack made with fresh or canned yellow squash, seasoned breadcrumbs, and Parmesan cheese. They bake to golden perfection and can be served with your favorite dipping sauces.

1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
2. If using fresh squash, grate and place in a clean towel, then squeeze out excess moisture. If using canned squash, drain and press through a fine strainer.
3. In a large bowl, combine the drained squash, breadcrumbs, Parmesan, diced onion, egg, garlic powder, paprika, salt, and pepper. Mix until evenly combined.
4. Using a tablespoon or lightly oiled hands, shape the mixture into 20 small tots and place them on the prepared baking sheet, spacing evenly.
5. Lightly spray the tots with cooking spray or brush with olive oil. Bake for 18–20 minutes, flipping halfway through, until golden brown and crispy.
6. Remove from the oven and let cool for 2–3 minutes before serving with your favorite dip.
