1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with liners or grease.
2. In a large bowl whisk sourdough starter, egg, milk, honey or maple syrup, oil, lemon juice and vanilla until smooth.
3. In another bowl sift together flour, baking powder, baking soda, salt and lemon zest.
4. Gradually fold dry ingredients into wet ingredients until just combined, avoiding overmixing.
5. Toss chopped strawberries in a teaspoon of flour, then gently fold into the batter.
6. Spoon batter into muffin cups, filling each three quarters full, then rest for 10–15 minutes.
7. Bake for 20–23 minutes until tops are golden and a toothpick comes out clean.
8. Cool in pan for 5 minutes, then transfer to a wire rack and enjoy warm or store when fully cooled.
