1. Preheat oven to 375°F (190°C) and lightly oil a 9×13 casserole dish.
2. Drizzle 1 tablespoon olive oil on the bottom of the dish.
3. Arrange a layer of zucchini slices to cover the base, slightly overlapping.
4. Top with a layer of yellow squash slices, overlapping in the same way.
5. Scatter a layer of tomato and onion slices over the squash.
6. Sprinkle half of the minced garlic, chopped basil, salt, and pepper evenly.
7. Repeat the layering sequence until the dish is nearly full, ending with squash or zucchini.
8. Combine mozzarella and Parmesan cheese, then sprinkle over the top layer.
9. Mix breadcrumbs with remaining olive oil and sprinkle over the cheese.
10. Bake uncovered for 35–40 minutes until vegetables are tender and the topping is golden brown.
11. Let rest for 5 minutes before serving.
