1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. Whisk together flour, baking powder, salt, and cinnamon in a large bowl.
3. Stir oil or melted butter, brown sugar, granulated sugar, eggs, and vanilla extract in a medium bowl until glossy.
4. Gradually add dry ingredients to wet ingredients and mix until just combined.
5. Fold chopped apples and optional mix-ins into the batter.
6. Pour batter into the prepared pan and smooth the top.
7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
8. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
9. In a small saucepan, melt butter over low heat, then stir in brown sugar and milk until combined.
10. Remove from heat, stir in vanilla extract, and let the glaze thicken slightly.
11. Drizzle the brown sugar glaze over the cooled bread and allow it to set.
12. Slice and serve.
