Sweet Sourdough Hot Chocolate Mix with Chocolate Starter

Description

A decadent hot chocolate mix infused with dried chocolate sourdough starter powder for a rich, tangy depth in every cup. Perfect as a cozy winter drink or a thoughtful homemade gift.

  • 1/2 cup active sweet sourdough starter
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon sugar
  • 1 teaspoon warm water
  • 1 cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 1/4 cup finely chopped dark chocolate
  • 2 tablespoons dried chocolate sourdough starter powder
  • 1 tablespoon cornstarch
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon cinnamon (optional)
  • pinch of espresso powder (optional)

  • Instructions

    1. Refresh the sourdough starter by feeding it equal weights of flour, cocoa powder, and water and let it ferment until bubbly.

    2. In a small bowl mix 1/2 cup active starter with 1 tablespoon cocoa powder and 1 teaspoon sugar so it forms a smooth paste.

    3. Spread the paste thinly on parchment paper and dry in a cool area or oven with light on until completely crisp, about 24 hours.

    4. Break the dried starter into pieces and pulse in a blender to create a fine powder.

    5. Combine cocoa powder, powdered sugar, cornstarch, salt, cinnamon, espresso powder, and dried starter powder in a large bowl and whisk to blend.

    6. Fold in chopped dark chocolate and pulse briefly in a food processor for a smooth, uniform mix.

    7. Store the mix in airtight jars in a cool, dry place for up to three months and label with date.

    8. To serve, whisk 3 tablespoons of mix into 1 cup heated milk and simmer gently for 1–2 minutes until velvety.
