1. Thinly slice beef across the grain and marinate with 1 tbsp soy sauce and cornstarch for 10–15 minutes
2. Cook noodles according to package instructions until al dente, drain and rinse with cold water
3. Whisk together remaining soy sauce, brown sugar, rice vinegar, garlic, ginger and oyster sauce in a bowl
4. Heat oil in a wok over medium-high heat and sear beef until browned, then set aside
5. Pour sauce into the wok and simmer until slightly thickened
6. Add noodles and beef back to the wok, toss to coat in the sticky sauce, garnish with scallions and sesame seeds
