Ingredients

  • 2 medium yellow squash
  • ½ small onion
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • ½ cup gluten-free breadcrumbs
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • salt and pepper to taste
  • olive oil spray

  • Instructions

    1. Preheat oven to 400°F and line a baking sheet with parchment paper

    2. Grate squash and onion and place in a strainer

    3. Sprinkle with salt and let sit for 10 minutes then squeeze out excess liquid

    4. Mix drained squash, onion, flax egg (flaxseed and water mixed), breadcrumbs, nutritional yeast, garlic powder, smoked paprika, salt, and pepper in a bowl

    5. Shape mixture into 24 small tots on the baking sheet

    6. Lightly spray tots with olive oil and bake for 20 to 25 minutes, flipping once, until golden and crisp

    7. Let tots cool for a few minutes before serving
