  • 1 bunch fresh asparagus (about 450 g / 1 lb), trimmed
  • 4 large slices sourdough bread or 1 tart crust
  • 3 tablespoons unsalted butter
  • 1 lemon, zest and juice
  • 1/2 cup finely grated parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: fresh herbs, chili flakes, or honey

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    2. Trim asparagus ends, pat dry, and toss with olive oil, salt, and pepper.

    3. Melt butter over low heat, remove from heat, stir in lemon zest and juice.

    4. Arrange sourdough slices on the sheet, brush with half the lemon butter, and sprinkle with parmesan.

    5. Lay seasoned asparagus spears on bread, drizzle remaining butter, and add more parmesan.
