1. Preheat oven to 400°F
2. Slice spaghetti squash in half lengthwise and remove seeds
3. Drizzle squash with 1 tablespoon olive oil and season with salt and pepper
4. Place cut side down on a baking sheet and roast 35 minutes
5. Season chicken with salt pepper and italian seasoning
6. Heat 1 tablespoon olive oil in a skillet over medium heat
7. Cook chicken 5 to 6 minutes per side until internal temperature reaches 165°F then remove
8. In same skillet sauté onion until soft then add garlic and sun dried tomatoes
9. Pour in chicken broth, scrape pan bits, then stir in heavy cream and parmesan
10. Simmer sauce 3 minutes until thickened and season with red pepper flakes
11. Stir in spinach until wilted, return chicken to skillet and spoon sauce over
12. Use a fork to shred squash into strands and divide among plates
13. Serve chicken and sauce over spaghetti squash and garnish with parsley
