Description
Thick slices of king oyster mushrooms coated in a seasoned batter and fried to golden perfection for a vegan twist on classic fried oysters or chicken.

1. Clean mushrooms with a damp towel and slice stems into even medallions
2. Whisk plant based milk and vinegar in a bowl and let sit for five minutes
3. In a separate bowl combine flour, cornstarch, garlic powder, paprika, salt, pepper and cayenne
4. Divide the dry mix in half; set one half aside
5. Stir sparkling water into the other half to form a smooth batter
6. Heat oil in a skillet to 350°F (175°C)
7. Dredge each mushroom in the dry mix, then dip into batter, then again in the dry mix
8. Fry mushrooms in small batches for 2–3 minutes per side until golden brown
9. Transfer to a wire rack over paper towels and sprinkle with salt while hot
10. Serve immediately with your favorite dipping sauce
