  • 1/4 cup crushed peanuts
  • 2 tablespoons sesame seeds
  • 1/4 cup peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • water to thin dressing

  • Instructions

    1. Cook rice noodles according to package instructions, then drain and rinse under cold water.

    2. Toss noodles with one teaspoon sesame oil and set aside.

    3. Prepare shrimp by boiling or grilling until opaque, then chill.

    4. Slice carrots, cucumber, and cabbage into thin strips.
