Instructions
1. Preheat oven to 375°F (190°C) and grease an oven-safe bowl with coconut oil or butter.
2. In a bowl, toss diced apple with cinnamon, nutmeg, maple syrup and coconut oil until coated.
3. Transfer apple mixture to the prepared bowl and bake for 12–15 minutes until apples are tender and edges caramelize.
4. Remove from oven and spoon cottage cheese over the warm apples.
5. Top with granola or chopped nuts and an extra sprinkle of cinnamon if desired.
6. Serve warm or let cool and refrigerate for a chilled version.
