1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
2. In a blender, combine cottage cheese, pumpkin puree, eggs, maple syrup and vanilla extract; blend until smooth.
3. In a large bowl, whisk together blended oats, baking powder, cinnamon, nutmeg, pumpkin pie spice and salt.
4. Fold the wet mixture into the dry ingredients until just combined, avoiding overmixing.
5. Stir in optional mix-ins if using, then pour batter into the prepared pan and smooth the top.
6. Bake for 40–45 minutes or until a toothpick inserted in the center comes out mostly clean.
7. Allow the bake to cool in the pan for 15–20 minutes before slicing.
8. Serve warm or chilled, optionally topped with whipped cream, maple syrup or extra cinnamon.
