1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment or oil.
2. Toss sweet potato cubes with 1 tbsp olive oil, salt, pepper, half the chili powder and paprika. Spread in a single layer on the pan.
3. Roast sweet potatoes for 25–30 minutes, stirring once, until crisp on edges and tender inside.
4. While potatoes roast, heat remaining olive oil in a skillet over medium-high heat.
5. Sauté onion for 2–3 minutes until translucent, then add garlic and cook 30 seconds.
6. Add ground beef, break up with a spatula, season with remaining chili powder, paprika, salt, and pepper. Cook 7–10 minutes until browned and cooked through.
7. Assemble bowls: divide sweet potatoes among bowls, top with seasoned beef and avocado slices.
8. Squeeze lime juice over each bowl and garnish with cilantro or desired toppings.
9. Store components separately for meal prep, reheat potatoes and beef before assembling and add fresh avocado immediately.
