1. Prepare vegan ricotta by blending tofu or soaked cashews with lemon juice, olive oil, nutritional yeast, salt and pepper until slightly grainy.
2. Toast bread slices until lightly golden and crisp around the edges.
3. Heat a skillet over medium-high heat and add olive oil.
4. Add sliced mushrooms in a single layer and cook without stirring for 1 minute.
5. Season mushrooms with salt and stir occasionally until golden brown, about 5–7 minutes.
6. Add minced garlic and cook for another minute, then finish with lemon juice and fresh herbs.
7. Spread a generous layer of vegan ricotta on each toasted bread slice.
8. Top with sautéed mushrooms, extra herbs, microgreens or chili flakes if desired.
9. Serve immediately with fruit salad or tea on the side.
