  • 2 ripe avocados, halved, pitted, and sliced
  • 4 cups mixed greens (baby arugula, spinach, or butter lettuce)
  • 1/4 small red onion, thinly sliced
  • 1/4 cup toasted nuts (pistachios, almonds, or walnuts)
  • 2 tablespoons fresh herbs (mint, basil, or cilantro), torn
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons citrus juice (from segmented fruit or lemon)
  • 1 teaspoon honey or maple syrup
  • sea salt and cracked black pepper to taste

  • Instructions

    1. Prepare the citrus by peeling and slicing into rounds or segments, reserving any juice.

    2. Halve and pit the avocados, slice thinly, and toss with reserved citrus juice to prevent browning.

    3. In a small bowl, whisk together olive oil, citrus juice, honey, salt, and pepper to create the dressing.

    4. Arrange mixed greens on a platter or in a large bowl as the base.

    5. Layer citrus slices and avocado wedges decoratively on top of the greens.

    6. Scatter sliced red onion, toasted nuts, and torn fresh herbs over the salad.
