4. In a large bowl, combine drained squash, flour, eggs, cheese, green onions, parsley, garlic, salt, and pepper
5. Heat a thin layer of oil in a skillet over medium heat
6. Scoop about 2 tablespoons of batter into the hot oil and flatten gently

8. Transfer fritters to a paper towel lined plate to drain excess oil
