  • 23 medium yellow squash, grated (about 4 cups)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tablespoons fresh parsley (chopped)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • olive oil or neutral oil for frying

  • Instructions

    1. Wash and trim the yellow squash and grate into a bowl

    2. Sprinkle grated squash with a pinch of salt and let sit for 10 minutes

    3. Squeeze excess moisture from the squash using a towel or cheesecloth

    4. In a large bowl, combine drained squash, flour, eggs, cheese, green onions, parsley, garlic, salt, and pepper

    5. Heat a thin layer of oil in a skillet over medium heat

    6. Scoop about 2 tablespoons of batter into the hot oil and flatten gently

    7. Fry for 2–3 minutes per side until golden brown and crisp

    8. Transfer fritters to a paper towel lined plate to drain excess oil
