1. Brown sausage in a skillet until fully cooked and drain excess fat.
2. In a bowl, whisk together eggs, milk, mustard, sage, salt, and pepper.
3. Grease a 9×13-inch baking dish and layer bread cubes evenly.
4. Spread cooked sausage over the bread and sprinkle with cheese.
5. Pour egg mixture over the top, gently pressing bread to absorb liquid.
6. Cover tightly and refrigerate overnight.
7. Preheat oven to 350°F (175°C) and remove casserole from fridge 20 minutes before baking.
8. Bake uncovered for 40–45 minutes until golden and set.
9. Let rest 5–10 minutes before slicing and garnish with green onions or parsley.
