Description

These soft, golden garlic knots are made using sourdough discard and a touch of yeast for a quick, flavorful bake. Brushed with garlic butter and parsley, they make a perfect side or snack.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sourdough discard (100% hydration)
  • 1/2 cup warm water
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

  • Instructions

    1. Whisk together warm water, sourdough discard, sugar, and yeast and let sit until frothy

    2. Add melted butter, salt, and flour and stir until dough forms

    3. Knead dough on a floured surface for 6 to 8 minutes until smooth and elastic

    4. Place dough in a greased bowl, cover, and let rise for 45 to 60 minutes

    5. Divide dough into 10 to 12 pieces, roll each into an 8-inch rope and tie into a knot

    6. Place knots on a parchment-lined sheet, cover, and let rise for 25 to 30 minutes

    7. Preheat oven to 375°F (190°C) and brush knots with melted butter

    8. Bake knots for 15 to 18 minutes until golden

    9. Melt remaining butter, sauté garlic, stir in parsley, and brush over hot knots
