Description

A vibrant blend of sweet strawberries, tender spinach, and al dente pasta tossed in a honey-balsamic dressing for a refreshing summer meal or side dish.


Ingredients

  • 8 oz rotini or bow-tie pasta
  • 3 cups fresh baby spinach, rinsed and dried
  • 1 1/2 cups sliced fresh strawberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup sliced almonds or toasted walnuts
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

  • Instructions

    1. Cook pasta in salted boiling water until al dente, 8–10 minutes, then drain and rinse under cold water.

    2. Whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl until emulsified.

    3. In a large bowl, combine pasta, spinach, strawberries, and red onion.

    4. Drizzle half the dressing over the salad and toss gently to coat.

    5. Sprinkle feta cheese and nuts over the salad and add remaining dressing before serving.

    6. Chill in the refrigerator for 15 minutes if serving cold.
