  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, drained and sliced
  • 2 cups fresh baby spinach
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tbsp olive oil
  • salt and pepper, to taste

  • Instructions

    1. Pat the chicken dry with paper towels and season both sides with salt and pepper.

    2. Heat olive oil in a large skillet over medium-high heat until shimmering.

    3. Add chicken slices in a single layer and cook undisturbed for 4 to 5 minutes per side until golden brown and cooked through, then transfer to a plate.

    4. Reduce heat to medium and add minced garlic to the skillet, stirring constantly for about 30 seconds until fragrant.

    5. Pour in the heavy cream and whisk to combine, scraping up any browned bits from the pan.

    6. Stir in sun-dried tomatoes and simmer for 2 to 3 minutes to infuse the sauce.

    7. Sprinkle half of the grated parmesan into the sauce and whisk until smooth, then simmer for 3 to 4 minutes until slightly thickened.
