Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onion and cook until translucent about 3 to 4 minutes.
3. Stir in minced garlic and cook until fragrant.
4. Push aromatics to the edges and add chicken cutlets to the center.
5. Season chicken with salt pepper thyme and basil and sear each side until golden about 3 to 4 minutes.
6. Add chopped sun dried tomatoes and stir to combine.
7. Pour in chicken broth to deglaze the pan scraping up browned bits.
8. Reduce heat to medium low and stir in heavy cream.
9. Add white beans and fresh spinach and gently fold into the sauce.
10. Simmer until spinach wilts and sauce thickens about 3 to 4 minutes.
11. Adjust seasoning with salt pepper and lemon juice.
12. Sprinkle Parmesan cheese on top if using and remove from heat.
13. Serve directly from the skillet and enjoy
