  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 cup pumpkin purée (not pie filling)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1.5 cups chicken broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • salt and black pepper to taste

  • Instructions

    1. Heat olive oil in a skillet over medium heat and sauté diced onion and bell pepper for 3–4 minutes until softened.

    2. Add minced garlic and cook for 30 seconds until fragrant.

    3. Add ground turkey and cook for 5–6 minutes, breaking up the meat, until no longer pink. Season with salt and pepper.

    4. Stir in chili powder, ground cumin, smoked paprika, and cinnamon, cooking for 1 minute to toast the spices.

    5. Mix in pumpkin purée until well combined with the turkey and spices.

    6. Transfer the mixture to the slow cooker and add diced tomatoes, black beans, kidney beans, and chicken broth. Stir to combine.

    7. Cover and cook on low for 6–8 hours or high for 3–4 hours until flavors meld and chili thickens.

    8. For a thicker chili, cook uncovered for the last 30 minutes. For a thinner consistency, stir in additional broth.

    9. Taste and adjust seasoning with salt, pepper, or a squeeze of lime juice before serving.
