Easy Chicken Caesar Pasta Salad

Description

A refreshing summer salad combining grilled chicken, rotini pasta, crisp romaine, and creamy Caesar dressing for an easy and satisfying lunch or picnic dish.


Ingredients

  • 2 cups grilled chicken breast, sliced
  • 8 oz rotini pasta
  • 2 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1/2 cup grated parmesan cheese
  • 1/2 cup caesar dressing
  • 1 tbsp lemon juice
  • 1 cup croutons
  • 1 tbsp olive oil
  • salt and pepper to taste

  • Instructions

    1. Bring a pot of salted water to a boil and cook pasta until al dente, then drain and rinse under cold water.

    2. Toss pasta with olive oil and set aside to cool completely.

    3. Season chicken breasts with salt and pepper and grill or sear in a skillet for 6-8 minutes per side until cooked through.

    4. Let chicken rest for 5 minutes, then slice into strips.

    5. In a small bowl, whisk together Caesar dressing and lemon juice until smooth.

    6. In a large bowl, combine cooled pasta, romaine lettuce, cherry tomatoes, and sliced chicken.

    7. Pour dressing over salad and toss gently with tongs to coat.

    8. Sprinkle grated parmesan and croutons over the top and toss lightly.

    9. Adjust seasoning with salt, pepper, or extra lemon juice as desired.

    10. Chill for 15 minutes before serving for best flavor and texture.
