Description
A refreshing summer salad combining sweet corn, crisp cucumber, juicy tomatoes, and fresh herbs with a light olive oil and vinegar dressing.

Instructions
1. Bring a pot of water to a boil and cook corn for 3–5 minutes, then drain and cool.
2. Cut cooled corn kernels off the cob.
3. Dice cucumber and tomatoes; chop red onion and parsley.
4. In a large bowl combine corn, cucumber, tomatoes, onion, and parsley.
5. Drizzle olive oil and vinegar, season with salt and pepper, and toss to coat.
6. Chill in the refrigerator for at least 30 minutes before serving.
