  • 0.5 cup radishes, thinly sliced
  • 1 cup English cucumber, sliced
  • 1 large avocado, sliced or cubed
  • 0.25 cup fresh herbs (parsley, mint, dill)
  • a handful edible flowers (pansies, nasturtiums, viola)
  • 0.25 cup nuts or seeds (almonds, pumpkin, sunflower), toasted
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • salt, to taste
  • black pepper, to taste

  • Instructions

    1. Wash and dry greens thoroughly and place in a large bowl

    2. Slice cucumbers, radishes, and avocado evenly and add to the greens

    3. Halve cherry tomatoes and arrange in the bowl

    4. Chop or leave herbs intact and add to the salad

    5. In a small bowl whisk olive oil, lemon juice, honey, Dijon mustard, salt, pepper, and chopped herbs to make the dressing

    6. Drizzle half the dressing over the salad and toss gently with tongs or spoons

    7. Add more dressing as needed until leaves are lightly coated

    8. Sprinkle toasted nuts or seeds over the salad
