1. Preheat oven to 350°F (175°C)
2. Lightly toast sourdough cubes on a baking sheet for 10–12 minutes
3. Cook sausage or bacon until browned; set aside
4. Sauté vegetables until tender if making vegetarian version
5. In a large bowl whisk eggs, milk, salt, pepper, and garlic powder
6. Grease a 9×13 inch casserole dish with butter or olive oil
7. Layer half the bread cubes, half the meat or vegetables, and half the cheese
8. Repeat layers with remaining bread, meat or vegetables, and cheese
9. Pour custard mixture evenly over the layers and press gently to soak
10. Cover and refrigerate for at least 2 hours or overnight
11. Remove from fridge, let rest at room temperature for 15–20 minutes
12. Cover with foil and bake for 30 minutes
13. Remove foil and bake an additional 20–25 minutes until golden and set
14. Let rest for 10 minutes before slicing and serving
