1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2. Spread toasted sourdough cubes evenly in the prepared baking dish.
3. Scatter cooked sausage, spinach, bell pepper, onion, and garlic over the bread layer.
4. In a large bowl, whisk eggs, milk, parsley, basil, oregano, salt, and pepper until smooth.
5. Pour the egg mixture over the bread and fillings, pressing gently to help the bread absorb the custard.
6. Sprinkle cheddar and Parmesan cheeses evenly on top.
7. Cover the dish with foil and let rest for 15 minutes to soak or refrigerate overnight.
8. Bake covered for 30 minutes, then remove foil and bake an additional 20 minutes until golden and puffed.
