1. Preheat oven to 400°F (200°C).
2. Wash and chop all vegetables into similar-sized pieces.
3. In a large bowl, toss vegetables and sausage slices with olive oil, garlic powder, thyme, salt, and pepper.
4. Arrange the mixture in a single layer on a parchment-lined sheet pan.
5. Roast for 25–30 minutes, stirring halfway through, until vegetables are caramelized and sausage is browned.
6. If desired, drizzle maple syrup or sprinkle smoked paprika in the last 5 minutes of roasting.
7. Remove from oven and let rest for 5 minutes before serving.
8. Portion into meal prep containers after cooling for storage up to four days or freeze for longer storage.
